As collector Dr. Rodney Mott has pointed out, the French word for postal stationery is entiers, and the German term is ganzsachen each meaning "whole covers".
Most postal stationery pieces are collected as "entires", that is, the whole card, sheet or envelope.
It is less easily damaged than stamps, poses no gum or perf problems, is generally cheaper to acquire, and offers the collector an opportunity to collect something different and less frequently seen.

Wells Fargo imprints on unused United States postal stationery must be viewed with suspicion because quantities were printed in 1890 for sale to collectors well after there was any commercial need for them.
In the 1889 and later orders, the envelopes were made in a different "knife" (referring to the cut of the envelope, best seen in the shape of the back flap), thus adding additional varieties.

Postal Markings of the German U-boat Arm During the First World War 1914 to 1918 ~John Leathes
The printing of stamps has always been a changeable business, and postal services have changed printers and designers according to cost, convenience, and whim, throughout the existence of stamps.
A long run of the same stamp may have gone through several different types of paper, slightly different designs (hardly noticeable to the untrained eye) and colour shades.
